ABOUT Shawarma style Chicken RECIPE

Shawarma is a great recipe of the Middle Eastern cuisine. It is made from marinated chicken or any other meat cooked slowly on a vertical spit for many hours. The chicken is then very skillfully shredded to be served on a plate or wrap. Shawarma is usually relished along with salads , pickle, toum(garlic) sauce, hummus and arabic bread. One can prepare this dish at home by marinating the chicken pieces in shawarma spices, Greek yoghurt and lemon juice.It can then be cooked in oven or pan fried. Once done the chicken is shredded and served. The few spices that go into making the shawarma style chicken fill up the whole place with an aromatic flavour .

Ingredients Serving: 4

  1. For Marination
  2. Chicken thighs(boneless cut into big pieced) 1/2 kg
  3. Garlic paste 2 teaspoons
  4. Yoghurt 2 tablespoons
  5. Ground cumin 1/2 teaspoon
  6. Ground cardamom 1/2 teaspoon
  7. Ground black pepper 1/2 teaspoon (use less if you want mild)
  8. Ground cloves 1/4 teaspoon
  9. Ground cinnamon 1/4 teaspoon
  10. Ground fennel seeds 1/2 teaspoon
  11. Salt to taste
  12. Juice of half lemon
  13. Olive oil 1 tablespoon
  14. ACCOMPANIMENTS:
  15. Pitta bread, garlic sauce, hummus, french fries, lettuce leaves, arabic pickle and olives,

Instructions

  1. Marinate chicken with the ingredients mentioned under marination.
  2. Let the chicken marinate overnight
  3. Grill in an oven or non stick pan till done.
  4. Slice the chicken pieces finely into small and thin slices
  5. Serve hot with accompaniments such as pita bread,hummus, garlic sauce and salad

Can i use refined oil in the place of olive oil?
