ABOUT Rajasthani Laal Mass RECIPE

Laal Maas is a very popular meat curry from Rajasthan,India.Traditionally laal mass prepared using mutton,yoghurt and Rajasthan special red mathania chillies.It is very hot and rich dish.

Ingredients Serving: 2

  1. Mutton -500grams
  2. Curd/Yoghurt -1cup
  3. Rajasthan red mathania red chilli or any other dry chilli-10 + 5
  4. Onions-2chopped
  5. Ginger paste -2teaspoon
  6. Garlic paste-2teaspoons
  7. Mustard oil-1/2cup
  8. Bay leaf-2
  9. Cloves-5
  10. Green cardamom-4
  11. Turmeric powder-1/2teaspoon
  12. Coriander-2teaspoon
  13. Kashmiri Red chilli powder-1teaspoon
  14. Salt to taste
  15. Chopped garlic-2teaspoons
  16. Ghee-2tablespoons
  17. Charcoal-1

Instructions

  1. Soak 10 red chillies into warm water for 29 minutes, then strain the water and grind to make a paste
  2. Heat mustard oil in a wok
  3. Dry roast the coriander and grind to make a fine powder
  4. Temper the oil with bay leaf,green cardamoms and cloves
  5. Add chopped onions into the oil,fry until light brown colour
  6. Add garlic paste and stir for a minute
  7. Add ginger paste and sauté until the raw smell of ginger garlic paste goes away
  8. Add mutton and mix with masala and cook
  9. Add turmeric powder and salt
  10. Cook for 5 minutes on medium flame ,continuous stirring
  11. Cover the lid and cook for 15 minutes on low flame,stir in between
  12. Add Pour 2 cups warm water ,let bring the water to boil,when the water start boiling cover the lid and simmer the gas,cook for 40 to 45 minutes
  13. Open the lid ,stir and transfer to a bowl
  14. Put the charcoals on gas stove for 5 minutes on medium flame
  15. Hear ghee in a small pan,add 5 dry red chillies, kashmir red chili powder and chopped garlic .when they will start to be fried then add this into the meat curry bowl
  16. Put the lighted charcoal in a steel bowl,put the bowl into the curry bowl ,pour ghee from top..when the smoke will start rise up. .cover the bowl with lid and put a heavy thing on the lid
