Traditional Gujrati Khandvi with a fruity twist and a minty dip.

Pineapple Khandvi with Mint Mayo

Ingredients to make Pineapple Khandvi with Mint Mayo

  • 1 Cup (100gm appx) gram flour
  • 3/4 cup yogurt
  • 1 Cup water
  • 100 gm pineapple
  • 1 Tsp ginger Paste (optional)
  • 1 tsp salt
  • 1/2 tsp turmeric powder
  • 1/4 Tsp asafoetida
  • 1 tbsp oil
  • 1 tsp mustard seeds

How to make Pineapple Khandvi with Mint Mayo

  1. Cut the Pineapple in very small dices ( Brunoise cut). Put it in a Pan on medium heat and caramelise the Pineapple. Keep it aside
  2. Mix yogurt, Gram Flour,Water and whisk it well so that no lumps are formed.
  3. Add salt, turmeric powder,asafoetida,,ginger Paste and mix it well to make a batter of Medium consistency.
  4. Put the Mixture in a Pan and cook it on High heat for 3-4 minutes untill it gains a thick consistency.
  5. Put the Hot Mixture on a Flat Table counter and spread it evenly such that it forms a thin layer. Let it cool down for 2-3 minutes such that it forms a solid layer.
  6. Cut it into a rectangular shape on the counter table itself and add caramelised pineapple over it.
  7. Roll the rectangular layer using a thin knife such that it forms a roulade with pineapple in its layers.
  8. Heat the oil, Add mustard seeds in it, let sputter. Pour over roulade and plate it.

My Tip:

Make the Khandvi thin as it will look more tasty once it goes in our mouth
