Ingredients Serving: 6

  1. 1 cup all purpose flour
  2. 2 tbsp milk powder
  3. 3/4 cup grated carrot
  4. 1/2 cup curd
  5. 1/2 cup granulated sugar
  6. 1/4 cup oderless oil
  7. 1/4 cup Milk
  8. 1/4 Tsp cinamon Powder
  9. 1 tsp Baking powder
  10. 1/4 tsp Baking Soda
  11. 3-4 tbsp walnuts chopped

Instructions

  1. sieve flour and milk powder, keep aside
  2. in a mixing bowl mix curd, sugar, baking powder and soda, leave this mixture for 5 minutes
  3. then add cinamon powder and mix well
  4. add dry mixture and milk alternatively, keep mixing
  5. now add oil and mix well
  6. finally fold in carrots and 2 tbsp of walnuts
  7. the batter should be smooth flowing batter
  8. pour the batter into a greased tin and sprinkle the remaining walnuts on the top
  9. tap down the tin once then place the tin in the preheated oven and bake at 180c for 30 minutes
  10. once done, remove from the oven and cool completely
  11. slice it and serve or store in air tight container
