Recipe Ingredients

  • 4 medium beetroots
  • 2 carrots
  • few pickled gherkins
  • 2 tbsp olive oil
  • 1 tbsp vinegar
  • 1 tbsp lemon juice
  • salt and pepper to taste

Recipe Preparation

  1. In a pot, boil the beetroots and carrots for 20 mins. Refresh under tap water, let cool and dice.
  2. In a bowl, place the diced beetroots and carrots. Drizzle with vinegar, lemon juice, olive oil. Season with salt and pepper.
  3. Toss the rest of the ingredients together,in with the beetroot and carrots.
  4. Serve with pickles on the side.
