- 4 medium beetroots
- 2 carrots
- few pickled gherkins
- 2 tbsp olive oil
- 1 tbsp vinegar
- 1 tbsp lemon juice
- salt and pepper to taste
- In a pot, boil the beetroots and carrots for 20 mins. Refresh under tap water, let cool and dice.
- In a bowl, place the diced beetroots and carrots. Drizzle with vinegar, lemon juice, olive oil. Season with salt and pepper.
- Toss the rest of the ingredients together,in with the beetroot and carrots.
- Serve with pickles on the side.
