This is an easy vegetable biryani in cooker with lots of flavours

Ingredients Serving: 6

  1. basmati rice - 1 cup
  2. Chopped beans - 1/4 th cup
  3. Chopped carrots - 1/4 th cup
  4. Green peas - 5 tbsp
  5. Sliced onion - 2
  6. Biryani masala powder - 2 tbsp
  7. Coconut milk - 1/2 cup
  8. red chilly powder - 1/2 tsp
  9. Cinnamon stick - 1 inch
  10. cloves - 2
  11. Cardamom pods - 2
  12. Bay leaf - 1
  13. Ghee
  14. Bread slices - 4
  15. Ginger garlic paste - 2 tsp
  16. Salt

Instructions

  1. Heat a heavy bottomed pan with some ghee. Add the cinnamon, cloves, cardamom and the bay leaf.
  2. Once they start smelling, add the sliced onion and saute until golden brown. Then add the ginger garlic paste and saute further for few seconds.
  3. Then add the vegetables, powdered masalas and salt, cook until the vegetables are half done. Wash and soak the basmati rice as well.
  4. Now add the coconut milk to the cooking masala, and saute for few more seconds. Then add the soaked basmati rice along with 1 cup of water. Cover the pan with a lid and cook this on a low flame for 25-30 minutes or until the water is soaked up or the rice is cooked.
  5. Slice the bread into small pieces and deep fry them in some ghee. Now open the lid of the pan, stir the biryani and then add the bread croutons, mix and serve.
