ABOUT Steamed Veg Ragi Rolls- Elderly - Healthy Heart RECIPE

This is one of the best breakfast recipe for someone suffering from heart ailments and elderly folks. This can also be consumed by all age groups to ensure a healthy heart. One of the grandma's recipes. Ragi is a rich source of fiber and helps lower cholesterol level. Its also good for weight control and diabetes. Veggies added in this are rich in Vitamins, fiber, proteins, carotene and nutrients. All in all a perfect breakfast dish

Ingredients Serving: 3

  1. 2/3 cup ragi flour
  2. 1/3 cup brown rice
  3. 1/4 cup Peas
  4. 1/4 cup grated broccoli
  5. 2tbsp french beans finely chopped
  6. 2tbsp grated carrots
  7. 1 small onion finely chopped
  8. few curry leaves
  9. 2-3 Finely chopped Green chillies
  10. Salt to taste
  11. 1/2 tsp mustard seeds
  12. 1/2 tsp cumin seeds
  13. 1/2 tsp Urad dal
  14. Canola or olive oil

Instructions

  1. Grind brown rice to flour. Mix Ragi and rice flour. Add hot water with little salt to the flour. mix with spoon and allow it to cool slightly until its still warm and you can knead the dough. Do not add too much water, it should be soft dough
  2. In a pan, heat oil, add cumin and mustard seeds allow it to crackle. Add urad dal, and stir until golden brown. Add onions and sauté until translucent.Add chilies, beans and carrot stir fry for few mins. Add broccoli and peas. Mix well. Add little water, cover and cook until tender
  3. Meanwhile Boil water in a vessel for steaming or in a Idli cooker. Grease Idli pan with little oil and keep it aside
  4. Add these veggies to the dough and knead it again. Make small balls, rolls and place it on idli pan. Steam for 5-6 minutes. Ragi will be moist and dark in color. Veg Ragi is ready to be served for breakfast
