ABOUT Roasted sweet potato-pumpkin purée with cinnamon and nutmeg( for infants/toddlers) RECIPE

Sweet potatoes are an excellent source of vitamin A (in the form of beta-carotene). They are also a very good source of vitamin C, manganese, copper, pantothenic acid and vitamin B6. Additionally, they are a good source of potassium, dietary fiber, niacin, vitamin B1, vitamin B2 and phosphorus. The fiber, potassium, and vitamin C content in pumpkin all support heart health. Both cinnamon and nutmeg are used for generations in India to harness their medicinal benefits. Roasting the veggies gives them a different flavour than the regularly made purées. Ingredients Serving: 1

  1. 100 gms red pumpkin
  2. 100 gms sweet potatoes
  3. A pinch of salt
  4. 1 tsn cinnamon powder
  5. 1 tsn nutmeg powder
  6. water as needed for pureeing
  7. 1 tbn oil for roasting

Instructions

  1. Chop the washed sweet potatoes and pumpkins in wedges form
  2. Brush a tbsn oil on them using a pastry brush
  3. Sprinkle a tsn of nutmeg and cinnamon powder on them and coat well
  4. Fill up half of a baking dish/tray with water and place the veggies in a bake/roasting safe bowl in the dish
  5. Cover the whole dish with aluminium foil sheet and roast in oven for 30 minutes. Alternatively, you can also roast on the gas stove directly( being careful not to burn the veggies)
  6. Remove the aluminium cover after roasted and let the veggies cool
  7. Deskin the veggies and place them in a bowl
  8. Mash them well and add a pinch of salt and mix well. Toddlers can consume the purée after this
  9. For babies, purée the mix in a blender using very little water
  10. This purée can be enjoyed warm/at room temperature
