ABOUT Khorak RECIPE

This recipe is basically a sweet dish made with whole wheat flour and is loaded with nuts. This recipe is usually given by a mother to a daughter when she is pregnant and after baby birth also.These are cut into small squares and had to be eaten before breakfast with milk. This is very healthy to be eaten during and after pregnancy.Khoraj means the food whicj gives energy.

Ingredients Serving: 6

  1. Whole Wheat flour 500 gms
  2. ghee 500 gms
  3. Sugar 500 gms
  4. Poppy seeds 125 gms
  5. Grated dry coconut 250 gms
  6. Almonds 100 gms( chopped )
  7. cashews 100 gms (chopped )
  8. Unsalted Pistachios 100 gms
  9. Kishmish 100 gms
  10. 10( chotti ellachi) green cardomoms
  11. Edible gum 150 gms(gaund)

Instructions

  1. Grind ellachi powder ,keep aside.
  2. Grind Edible gum ,keep aside.
  3. Chop all dry fruits separately and keep aside.
  4. Grate dry coconut.
  5. Soak sugar in 1 glass of water.( every half kg sugar needs to be soaked in a glass of water )
  6. Now heat ghee in heavy bottomed pan.
  7. Add whole wheat flour and start roasting (bhuno) on slow flame till golden orange colour on slow flame.(bhuno till 20 to 25 mins)
  8. Now add all indgrients one by one.
  9. First add gaund [gum] powder and saute.( bubbles will form by adding gaund)
  10. Then add ellachi pwd.
  11. The mixture is light brown now.
  12. Again continue sauteeing for 5 more mins.
  13. Now at this stage ,add all dry fruits.
  14. Add kishmish and khus khus at the end.
  15. Now carefully on high the flame , add sugar soaked slowly and carefully.
  16. At this stage the mixture will leave it's side from pan.
  17. Pour this mixture in greased plates.
  18. Make marks with knife.
  19. Let it cool and serve
  20. we give this as token of love to pregnant ladies by adding coins or silver coins on top.
