Barley known as jau/juvar is called king of cereals. It is benefitial for skin, blood pressure, cancer, arthritis & for loose weight. It can be eaten in breakfast /lunch or dinner. Barley pulav is full of nutritions.

Ingredients Serving: 4

  1. Broken Barley (jau Dalia) 1 cup (200 gm)
  2. 1/2 cup peas (mutter)
  3. 1/4 cup snow peas
  4. 1/2 cup Carrots chopped
  5. 1/2 tsp cabbage chopped
  6. 1 onion chopped
  7. 2 Green chillies finely chopped
  8. 1/2 tsp Red pepper
  9. 1/2 turmeric powder
  10. Oil for tempering
  11. leaves Green coriander
  12. 1 tsp mustard seeds
  13. Salt to taste

Instructions

  1. Dry Roast barley in a pressure cooker until golden.
  2. Heat oil in a pressure cooker. Add mustard seeds. Once crackled add onions. Saute it. Once translucent add all vegetables, red chilli powder, turmeric powder & salt. Saute for 1 minute.
  3. Add barley Dalia. Mix well. Saute for 1-2 minutes. Add 3 cup water. (or as per thick Ness)
  4. Cook it until 3-4 whistles on medium flame. Switch off gas. Let it cool.
  5. Open the pressure cooker. Serve hot with curd or tomato sauce.
