Broken wheat kheer popularly known as "Godhi huggi" or "kuttida godhi payasa" is a famous traditional North Karnataka delicacy usually prepared during special occasions. This Broken Wheat Kheer is a very healthy, filling and super-tasty pudding prepared with cracked wheat (dalia), jaggery and milk. This sweet dish packed with energy is suitable for all age groups and expecting mothers. The main ingredient in this recipe Cracked wheat or broken wheat is made by crushing whole raw wheat berries (kernels) into small pieces. Since it contains the outer bran and germ of the wheat, it provides some additional benefits as well. This nutty food is low in calories and loaded with nutrients. Another ingredient Jaggery is considered as a healthy substitute for sugar as it is loaded with antioxidants and minerals such as zinc and selenium, which boost resistance against infection and also helps in increasing the total count of hemoglobin in the blood. Broken wheat, jaggery along with goodness of milk and other ingredients make this kheer more nutritious and delicious.

Ingredients Serving: 8

  1. 1 cup broken wheat
  2. 1 tablespoon poppy seeds (khus khus)
  3. 1and half cup jaggery
  4. 2 teaspoon clarified butter (ghee)
  5. 4 cups milk
  6. Fist full of dry fruits(cashews and raisins)
  7. ½ teaspoon cardamom- nutmeg powder
  8. ¼ cup homemade fresh milk cream (optional)
  9. 4 cups water

Instructions

  1. Bring milk to boil and keep aside.
  2. Soak broken wheat and poppy seeds together for 10 minutes
  3. Pressure cook till 3 whistles or till it is cooked soft and mushy.
  4. In a thick bottom vessel, fry cashews and raisins slightly in a teaspoon of ghee and keep aside.
  5. Heat a teaspoon of ghee and add cooked broken wheat and saute on medium flame
  6. Now pour milk and cook for 3 to 4 minutes
  7. Keep stirring in between.
  8. Add jaggery and keep stirring and bring to boil.
  9. Now add fresh cream, stir well and boil for 2 more minutes.
  10. Add cardamom-nutmeg powder and fried cashews and raisins.
