Batata Vadas

Ingredients to make Batata Vadas

  • 6-8 nos - Potatoes, boiled and mashed
  • 1/2 cup - Coriander leaves, finely chopped
  • 2-3 nos - Green chillies, minced
  • 6-7 cloves - Garlic, minced
  • 1 tbs - Lemon juice
  • 1/2 tsp - Red chilli powder
  • Salt to taste
  • For the batter :
  • 1 cup - Besan
  • 1 pinch - Baking soda
  • 1/4 tsp - Turmeric powder
  • Salt to taste
  • For Tempering
  • 10-12 - Curry leaves
  • 1 tsp - Mustard seeds
  • 1/2 tsp - Turmeric powder
  • 1 pinch - Hing
  • Refined oil to deep fry

How to make Batata Vadas

  1. In a big bowl, add the boiled mashed potatoes,salt, mined garlic n green chillies, chopped fresh coriander leaves n red chilli powder.Mix well.
  2. Heat 1 tbsp oil in a tempering pan, add hing, mustard seeds, curry leaves and turmeric powder and roast for 2 mins.
  3. Add this to the mashed potatoes. Mix well and add lemon juice, adjust spices n salt.
  4. For the batter: Heat oil in a kadai, take 1 cup besan, add turmeric powder and salt to taste.
  5. Add enough water to make batter in dropping consistency.Now add baking soda and mix well, adjust salt now.
  6. Make small balls n dip in the batter n deep fry till golden in colour. When done place Vadas in kitchen towel so that extra oil gets soaked.
  7. Serve hot with Pav or sliced bread with garlic chutney or mint chutney.
