The Original Handi Gosht

Ingredients to make The Original Handi Gosht

  • 1 kg mutton cut into small pieces
  • 2-3 tbsp mustard oil
  • 750 gm onions chopped
  • 2 tbsp Ginger-garlic paste
  • 3 red chillies, broken into two
  • 4-5 cloves
  • 3-4 cardamoms
  • 7-8 black pepper corns
  • 1 bay leaf
  • A small stick of cinnamon
  • 1/2 cup Buttermilk
  • 1-2 tsp red chilli powder
  • 2 tsp coriander powder
  • Salt to taste
  • A bunch of coriander leaves, chopped to garnish
  • 1 cup whole wheat flour kneaded with water to make dough

How to make The Original Handi Gosht

  1. In a large Handi, add all the ingredients, one by one except the coriander leaves and the dough. Mix well.
  2. Put the lid on and seal with the dough.
  3. Put on low heat, ideally, over coal or upale.
  4. Let it cook for an hour and 15 minutes.
  5. Remove from fire. Let it cool for 10 to 15 minutes before removing the hardened dough.
  6. Check for doneness, adjust seasoning if required.
  7. Garnish with coriander leaves. Serve hot .
My Tip: Serve with litti or bati.
