Ingredients to make Banana Honey Loaf Trifle

  • For the eggless banana wheat loaf::
  • wheat Flour-1cup
  • maida - 1/8 cup
  • Baking Powder-1 teaspoon
  • salt-1/4 teaspoon
  • butter - 6 tablespoon
  • Powdered sugar - 1/3 cup
  • honey - 1/4 cup
  • Vanilla essence - 1 teaspoon
  • bananas mashed - 1/2 cup
  • baking soda - 1/4 teaspoon
  • Milk - 1/2 cup+ 1/2 teaspoon vinegar
  • For the other layers::
  • Simple sugar syrup - 1/2 cup
  • 4-5 Frozen bananas (keep bananas in the freezer in a ziplock bag for 5 hours)
  • Jam (I used mixed fruit)- 2 tablespoon

How to make Banana Honey Loaf Trifle

  1. To bake the banana loaf, start by beating the butter with an electric beater till it is fluffy. Then add in the sugar and honey and beat once again.
  2. Mash the bananas and add baking soda into it. Whisk this mixture until it is frothy. Now, add the frothy banana into the butter mixture and whisk it well. (If the mixture seems curdled it is okay.)
  3. Sift together the flour, wheat flour, salt and baking powder in a bowl separately. Add milk and vinegar in a separate bowl.
  4. Add the milk mixture and flour mixture alternately into the butter mixture and fold the batter. Do not over mix.
  5. Preheat the oven to 175 degrees C. Grease a loaf pan with butter and pour in the thick batter and level the top smoothly.
  6. Bake this for 20- 25 minutes till the toothpick comes out clean when inserted in the centre. Invert and cool in wire rack.
  7. To prepare the simple sugar syrup, in a pan, add some sugar and some water just to cover the sugar and let it boil for 4 to 5 minutes. Then turn it off. Blend the frozen bananas in a blender till its creamy.
  8. For assembling, take your glasses, crumble some loaf into the bottom. Next drizzle in some sugar syrup. Then add the blended creamy bananas, again some crumbled loaf with a little sugar syrup and blended bananas.
  9. Top the upper layer with some jam. Add nuts or chocolate on top. Chill for some time and serve!

My Tip:

1. You can also cook this with a sponge cake or a store bought cake. I had some bananas at home so I made good use of it. 2. You can even make a layered cake instead of a trifle. Assemble it the same way without crumbling the loaf, by placing alternate layers of loaf(with sugar syrup), blended bananas and jam and freeze it for 1 to 2 hours. 3. Instead of plain blended bananas, you can blend them with nutella or cocoa powder or choco chips.
