Ingredients Serving: 4

  1. ladies finger - 250 gm
  2. chopped shallots - 10
  3. Chopped garlic - 1 tbsp
  4. Chopped tomato-1
  5. rice rinsed water - 2 cup
  6. Tamarind - small lemon size
  7. Coconut milk -1/2 cup
  8. Salt - to taste
  9. For tempering:-
  10. oil - 1 -2 tbsp
  11. mustard and urad dal - each 1/2 tsp
  12. Channa dal - 1 tsp
  13. Fenugreek - 1/4 tsp
  14. green chilli and dried red chilli - 3
  15. curry leaves and coriander leaves - few.

Instructions

  1. Rinse,pat dry the bhendi and cut into 1 or 2 inch size pieces.
  2. Get ready with all the ingredients.
  3. Soak tamarind and extract ,keep aside. blend grated coconut and extract coconut milk.
  4. While cooking rice ,rinse and save the water.
  5. Heat oil, add mustard,urad dal,channa dal,curry leaves and dried red chillies, Stir fry it.
  6. Add chopped onion, garlic and slited green chillies,saute for 1 minute.
  7. Add bhendi cuts, salt and saute well.Then chopped tomato.
  8. Add tamarind water and rice rinsed water.Let it boil till raw smell goes.
  9. Add coconut milk and mix well. check salt.Let it boil in low flame for 2 minutes.
  10. Garnish with chopped coriander leaves,mix well.Switch off.Close and leave it for at least 15 minutes before serving.
  11. Serve with hot plain rice and pappad.
