Fried Pink Perch

Ingredients to make Fried Pink Perch

  • 4 large pieces of firm fleshed single boned fish (I have used the Pink Perch here)
  • 1 tsp Saunf or Aniseed
  • 3-4 Green Chillies (reduce or increase according to heat preferred)
  • 1 small bunch of Coriander leaf stalks
  • 1 tsp Ginger juice
  • 1 inch piece of Raw Mango (if this is not available, use 1 tsp of lemon juice)
  • 3 tbsps of Sunflower Oil
  • Salt to taste
  • Garnish of your choice

How to make Fried Pink Perch

  1. Make a paste of all the ingredients barring the fish and oil.
  2. Make deep slits on the fish and marinate them in this paste for 30 mins.
  3. Heat oil in a non stick pan and fry each fish one side at a time.
  4. Remove from pan and serve it with garnish of your choice.
My Tip: The left over marinade can be boiled with some more water in the same pan. Then strain and serve it with the fish.
