Sweet potatoes are a great source of vit A and moringa helps to increase lactation, provides fibres and improves hemoglobin in pre and post delivery

Ingredients Serving: 2

  1. sweet potato 300 gms
  2. Moringa leaves 1 cup
  3. Oil to grease and fry
  4. Cornflour 1 tsp
  5. Bread crumbs 1/2 cup
  6. Garlic clove 1
  7. Salt to taste
  8. Red chilli powder 1/2 tsp
  9. Chilli flakes 1 tsp
  10. Coriander, lemon to garnish

Instructions

  1. Boil sweet potatoes and mash them well once cooled
  2. Chop moringa leaves finely. Take few drops of oil in a nonstick pan and cook moringa leaves till tender.
  3. Add to mashed potatoes with cornflour, salt, chilli powder and garlic (optional)
  4. Mix well with hands and make sure no lumps remain
  5. Preheat oven to 190 degrees C
  6. Grease a flat tray lightly with oil or butter.
  7. Take 1 tsp of mash in hand and roll lightly to form a mini log. Compress gently from both ends and repeat process till shape of a thick cylinder is formed.
  8. Roll gently in bread crumbs mixed with chilli flakes (don't worry if coating is uneven)
  9. Put in tray and bake for about 40 min, turning them at every 10 min.
  10. Serve hot with ketchup, lime, coriander.
