ABOUT Huro Gudiye (Freshly Mashed Chicken Side) RECIPE

This is a traditional Chakma recipe my Grandma used to cook and one that has been a favourite in my family. Chakmas are an ethnic group of Tibeto-Burman people from the Chittagong Hill Tracts of present day Bangladesh and our food is extremely simple with almost negligible amounts of cooking or spices involved, which makes it nutritious and healthy. Huro translates to chicken and gudiye implies something that has been mashed. So, here you go.

Ingredients Serving: 3

  1. 500 gms chicken (make sure to include the leaner pieces for an added crunch)
  2. 8-10 chopped green chillies (or as much or as less spicy as you want)
  3. 1 large onion finely chopped
  4. 1 small pod of garlic finely chopped
  5. 1 inches of ginger finely chopped
  6. 1 cup of fresh coriander leaves
  7. 1 teaspoon of cumin powder
  8. A pinch of turmeric
  9. ½ table spoon vegetable oil
  10. Salt to taste

Instructions

  1. Marinate all the ingredients for 15-20 minutes.
  2. Then assemble all of it in a pot and bring to boil.
  3. Once the meat is cooked through and the water reduced almost completely (do retain some water), coarsely grind the meat along with all the condiments in a pestle and mortar. Fine grinding not required but do ensure that the ginger and garlic pieces are pounded well enough to not cause overwhelming obstacles in your mouth.
  4. Relish with rice.
