ABOUT Homemade Rumaali Roti with Black Seeds.. RECIPE

A famous Indian bread that just melts in mouth if made the correct way. The key to these super soft roti is the use of warm milk and rolling it really thin. It is a great party dish and adds colours to the party ambience. I have added some black seeds to the dough for a change and to ensure the effectiveness of these magical seeds in these rotis add an overall healthy perspective to this popular flat bread. In Hyderabad it is a must have at any weddings or important parties hosted. Non veg curry goes very well with these, usually red chicken or green chicken are served at parties. However you can use any side dish of your choice. Not a single drop of oil is used in roasting them yet they will just leave you spellbound with their soft and fluffy texture. Ingredients Serving: 8

  1. All purpose flour 2 cups
  2. Salt 1 tsp
  3. Oil 1 tbsp
  4. Warm milk 1 cup or little more
  5. Black seeds 1 tsp

Instructions

  1. Add all the ingredients to a bowl and mix well until well combined.
  2. Add warm milk to it and knead a smooth dough out of it.
  3. Milk only should be used for soft and fluffy rumaali rotis.
  4. Cover with a damp cloth and set aside for 20 minutes.
  5. Heat a kadai or a deep pan on low flame.
  6. Now invert it on the flame.
  7. Divide the dough into small balls about 20 to 22.
  8. Roll each into a thin roti. It should be rolled as thin as possible.
  9. This is the secret of good rumaali rotis.
  10. Do not sprinkle any salt water on the kadai. Just roast all the rotis as you would do for phulkas.
  11. Keep the flame low to medium. Keep an eye on it. Do not increase abruptly. The rotis might be charred.
  12. When colour changes and some spots are seen, turn onto the other side and do the same.
  13. Each roti might take 2 to 3 minutes. Therefore it takes a little patience to do these.
  14. Keep your calm and make all in the same way.
  15. Soft, fluffier and super tastier homemade rumaali rotis are ready to be served with any side dish of your choice.
