The secret ingredient is red wine. The prawns are soaked in red wine and cooked to get a unique flavour. I have Indianised this Chinese recipe

Ingredients Serving: 4

  1. Prawns deveined and cleaned 200gms
  2. Red wine 30 ml
  3. Onions 2
  4. Tomato puree 1 cup
  5. Coconut milk 1 cup
  6. Garlic 5 pods
  7. Ginger 1 inch
  8. Green chiliies 2
  9. Red chilli powder 1 tsp
  10. Coriander powder 1 tsp
  11. Fennel 1/2 tsp
  12. Jeera 1/2 tsp
  13. Turmeric powder 1/2 tsp
  14. Salt accordingly
  15. Butter 50 gms

Instructions

  1. Marinate the cleaned and washed prawns in red wine for half an hour
  2. Chop the onions, ginger,garlic and green chillies to very fine pieces
  3. In a pan melt the butter and add in the finely chopped onions,ginger garlic and chillies
  4. Once onion turns pink add the tomato puree and simmer till the gravy thickens.
  5. Now add the red chilli powder, coriander powder ,salt and turmeric powder and stir well.
  6. Once the butter oozes out add in the coconut milk and the marinated prawns and simmer for 10 mins
  7. Coarsely grind the fennel and jeera
  8. Add the powder to the gravy,give a stir and garnish with coriander leaves.
  9. Serve hot with steamed rice,idiyappam or appam
