ABOUT Coconut Curd Clubs RECIPE

The name sounds interesting! Isn’t it? We are fascinated with Indian Dahi wada (dumplings made of Urad dal). My mother suggested an innovative recipe which has the similar appearance as well as tastes delicious. These clubs are suitable even to the lactose intolerants and vegans . Hope you try and enjoy these coconut curd clubs on the eve of New year & Christmas.

Ingredients Serving: 4

  1. Black gram – 1 cup
  2. Salt – to taste
  3. Oil – for deep frying
  4. Toothpicks – as required
  5. Cashew nut paste – ½ cup
  6. Coconut milk – 2 cups
  7. Lemon Juice - Extracted from one medium sized lemon / as per taste.

Instructions

  1. Soak black gram in water for about 2 ½ hours. After 2.5 hours , drain the water and grind it into a coarse thick batter similar. Pour some water if needed.
  2. Transfer the batter into a large vessel. Add salt to it and mix well. Allow it to rest for sometime.
  3. In the meanwhile, heat oil in a pan over a medium flame. Now wet your hand with water. Make small round shaped balls of the batter. Carefully, place these balls into the hot oil.
  4. Fry them on both sides until they turn golden in color and are cooked well. Follow the above steps for the rest of the batter.
  5. Turn off the flame.Now take water in a shallow dish and dip the hot balls into it. Then slowly squeeze the water from the balls . Insert toothpicks and Keep aside.
  6. For the preparation of curd with coconut milk - Take a bowl add coconut milk and cashew nut paste. Sprinkle salt and stir it well.
  7. Add lemon juice to the above mixture and mix it thoroughly.
  8. Put all the fried and squeezed balls into the prepared curd ( of coconut milk).
  9. Serve cool.
