ABOUT Delicious Stuffed Tomatoes With Nutty Gravy RECIPE

Let me tell you that I have a soft corner for all stuffed dishes. Its like a concealed surprise that hits you unexpected and you are left with a wonderful after effect. I'm not a tomato fan, however, there are a few recipes that tomatoes can carry just by themselves. One such delicacy is Stuffed Tomatoes. The taste and appeal of tomatoes are clearly visible and this dish does give the right credit to this beautiful, red vegetable.

Ingredients Serving: 3

  1. 6 Tomatoes
  2. 1/2 tsp Salt
  3. 1 tsp oil
  4. For the filling:
  5. 1/2 cup potato ( boiled, peeled and grated )
  6. 1 cup paneer (grated)
  7. 7-8 cashews (broken)
  8. 10-12 raisins
  9. 4 tbsp cheese (grated)
  10. 3 tbsp coriander leaves (chopped)
  11. 1 green chili (finely chopped)
  12. 1/2 tsp garam masala
  13. Salt to taste
  14. For the gravy:
  15. 2 tbsp ghee
  16. 2 tbsp Oil
  17. 4-5 black peppercorns
  18. 4-5 cloves (laung)
  19. 2-3 cardamom
  20. 1 inch piece cinnamon stick
  21. 2 bay leaves
  22. 1 cup onion (chopped)
  23. 2 tsp ginger-garlic paste
  24. 3 green chilies (slit vertically)
  25. 2 tsp coriander powder
  26. 1/2 tsp red chili powder
  27. 1/2 tsp turmeric powder
  28. 1/2 tsp garam masala
  29. 1/2 tsp White pepper powder
  30. 4 tbsp khoya
  31. 3 tbsp fresh cream
  32. 2 tsp Lemon juice
  33. 1 tsp honey
  34. Salt to taste

Instructions

  1. For the Filling:
  2. Mix all the ingredients in a bowl. Keep aside.
  3. For the Tomatoes:
  4. Pre-heat the oven to 180 degrees Celsius.
  5. Scoop the tomatoes from inside. Puree the pulp in a blender and keep aside.
  6. Mix oil and salt in a bowl and apply it on the skin of the tomatoes. Then fill the tomatoes with the filling and bake for 11-12 minutes. Keep aside.
  7. For the Gravy:
  8. Heat ghee and oil in a pan.
  9. When the oil is hot, add whole spices and fry for 30 seconds. Next, add onion and fry for 2 minutes.
  10. Then add ginger-garlic paste and fry till the onion turns golden brown in colour. Now pour in the tomato puree, green chili and cook for a minute.
  11. Add coriander powder, red chili powder, turmeric powder, garam masala, white pepper powder and salt and fry for 3-4 minutes.
  12. Then add khoya and cook for a minute. Next pour in the lemon juice, honey and 1/2 cup water and cook for another minute.
  13. Add cream and cook for another minute.
  14. Transfer the gravy in the serving platter. Assemble these filled tomatoes over the gravy.
  15. Garnish with fresh coriander and serve it hot.
