ABOUT FRENCH MACARON (using French meringue method) RECIPE

It's an authentic French macroon made with almond flour, castor sugar, icing sugar, aged egg whites and a pinch of cream of tartar is the secret ingredient. Fillings are made with cream cheese and mixed fruit jam and topped with coloured sprinklers.

Ingredients Serving: 7

  1. Almond flour 80grams
  2. Icing sugar 140 grams
  3. Castor sugar 40 grams
  4. Cream of tartar a pinch(secret ingredient)
  5. Egg white 70grams
  6. Green food colour gel little
  7. Filling
  8. Cream cheese 150 grams
  9. White chocolate 100grams
  10. Unsalted butter 45 grams
  11. Lemon zest 1
  12. Mixed fruit jam 2tablepoon

Instructions

  1. Sift icing sugar and almond flour and keep aside.
  2. Egg whites can be aged but its pure optional.
  3. Beat egg whites till frothy and add cream of tartar (secret ingredient) and castor sugar slowly till shiny and stiff.
  4. Fold in the dry ingredients slowly using cut and fold the macronage gently until you reach the ribbon consistency.
  5. Pipe out in a silpat and let it dry for three hours.
  6. Minimum two hours maximum three hours. Weather plays an important role.
  7. Bake at 130 degrees centigrade for 15 to 20 minutes.
  8. Check the doneness of macaron by touching the top. It should not move.
  9. Cool on a rack and then remove from silpat.
  10. Pair them with cream cheese filling and jam.
  11. For making cream cheese filling
  12. Whisk cream cheese well.
  13. Add unsalted butter and blend well.
  14. Melt white chocolate in microwave for few seconds.
  15. Add to the cream cheese mixture.
  16. Add lemon zest and whip with electric whipper. It's done.
  17. I also used readymade mixed fruit jam.
  18. Pair with cream cheese filling.
  19. Pair with mixed fruit jam.
