Mughlai kebab with a twist

Ingredients to make Mughlai kebab with a twist

  • 1 cup flattened rice (soaked and squeezed)
  • 1/2 cup Roasted besan/gram flour
  • 300 gm doodhi with outer green cover (separate inner fluffy part)
  • All whole garam masala
  • 6-8 garlic cloves
  • 1 cup hung curd
  • 2 tsp Lemon juice
  • 2 egg (1 to mix,1 for coating)
  • 1 tsp chat masala
  • 2 medium sized onions, nicely chopped
  • 2 green chilies, nicely chopped
  • Fresh coriander leaves
  • Salt to taste
  • Oil for cooking
  • 1 inch piece of ginger
  • 1 cup Vermicelli for coating

How to make Mughlai kebab with a twist

  1. In a pan, add doodhi/bottle gourd and all garam masala with ginger and garlic cloves, salt and boil it with a little water.
  2. When boiled, discard the excess water and grind it with a grinding stone not in a mixer jar, to this add flattened rice, chopped onion, green chillies, coriander leaves, hung curd, egg, chat masala, lemon juice and salt. Make kebabs of this mixture.
  3. Beat an egg and dip the kebabs in it and coat it with vermicelli and shallow fry it.
  4. Serve it hot with coriander chutney.
