Vari Nooka Upma – Broken rice upma

Ingredients to make Vari Nooka Upma – Broken rice upma

  • Broken rice rava - 1 cup
  • Moongdal - 1/3 cup
  • Oil - 3 tbsp
  • Mustard seed - 1/2 tsp
  • Cumin seed (jeera) - 1/2 tsp
  • Red chilly - 3
  • Hing - 1/2 tsp
  • Curry leaves - few sprigs
  • Water - 2 1/2 cup
  • Salt as per taste

How to make Vari Nooka Upma – Broken rice upma

  1. Soak the Moongdal for 20 minutes.
  2. Heat the oil in a heavy bottomed cooking pot. Add Cumin seeds, Mustard seeds and allow them to crackle. Add Red Chillies, Hing, Curry leaves and stir for a minute.
  3. Add Moongdal and saute for about 3 minutes on medium heat.
  4. Slowly pour the Rice and the Rava and stir occasionally to avoid lumps.
  5. Cook for 15 minutes on a low flame till required consistency is reached.
  6. Serve hot.
My Tip: Corn kernels if relished can be added while simmering. For a crispy crust, allow it to cook for a longer time. This will also increase its shelf life.
