ABOUT Orange Cake with Orange-Coffee Glaze RECIPE

Cake is prepared using fresh orange juice and zest does not require any additional essence as oranges has its own refreshing flavor and unique teste. Cake is frosted using sugar-orange-coffee glaze which gives cake a different taste. I have used less sugar while preparing cake. Increase qty as per your taste if glaze is not required. Make sure that oranges are fresh and sweet in taste while making a cake.

Ingredients Serving: 8

  1. Flour or Maida – 1 1/4th cup + 1tbsp for dusting a tin
  2. Baking Powder– 1 ½ tsp
  3. Baking Soda – ½ tsp
  4. Salt – a pinch
  5. Fresh Orange Juice– 3/4 cup (Fresh and sweet)
  6. Orange Zest – 1 ½ tsp
  7. Crystal Sugar – 1/4 - 1/2 cup or 6-7 tbsp
  8. Thick Curd – 1/2 cup
  9. Oil – ½ cup + 1tsp for greasing pan.
  10. Orange glaze – (Optional)
  11. Castor sugar – ¾ cup
  12. Orange juice – 2-3 tbsp
  13. Coffee mixture – 2tsp(Optional) (instant coffee prepared using ½ tbsp. warm water).

Instructions

  1. Preheat oven at 180°C.
  2. Mix all wet ingredients Oil, Orange Juice, Orange Zest, curd in a bowl. Add sugar. Whisk well till sugar dissolves and mixtures becomes fluffy.
  3. Sift Maida, baking powder, baking soda together twice or thrice for any impurities. Add salt. Mix well. Keep aside.
  4. Mix dry ingredients slowly into wet mixture. Fold gently.
  5. Grease baking pan with oil. Dust it with flour and spread evenly.
  6. Pour the batter in a greased pan. Lightly tap so that batter is spread evenly and there are no air bubbles.
  7. Bake for 30-35 minutes. Insert a tooth pick, it should come out clean. Let the pan sit on counter for 5 minutes.
  8. Flip cake and let it cool on wire rack.
  9. Glaze – In a small bowl take castor sugar. Add coffee mixture. Slowly add orange juice until glaze is smooth and has desired consistency. (add more juice or sugar if glaze is too thick or thin)
  10. Drizzle glaze over a cake. let it set for 10-15 minutes.
  11. Slice and serve.
