Spanakopita

Ingredients to make Spanakopita

  • 2 tbsp olive oil plus extra for brushing
  • 2 onions chopped
  • 1 green onion chopped
  • 2 garlic cloves chopped
  • 1 red bell pepper chopped
  • 1 kg spinach rinsed very well and chopped
  • bunch of coriander leaves chopped
  • 2 eggs beaten
  • 1/2 cup ricotta cheese
  • 1/2 cup feta cheese
  • 8 Puff pastry sheets

How to make Spanakopita

  1. Heat oil in a pan. Saute onion, red bell pepper, green onion, garlic. Stir in spinach, coriander leaves and continue sauteeing until spinach is tender yet dry.
  2. In a bowl, mix eggs, ricotta and feta cheese. Stir in the spinach mixture.
  3. Place 2-3 pastry sheets on a square oiled baking dish. Stuff the spinach and cheese mixture between two sheets. Brush oil between the sheets.
  4. Preheat oven to 175°C, and bake the pastry for 30-40 mins, until top is golden brown.
  5. Cut in to squares with a sharp knife and serve hot.
