A lovely warm flat bread called pita served with homemade fluffy labneh full of healthy vitamins and probiotics. A yummy superfood for people of all ages to kickstart their day with a new zeal and enthusiasm. This is soft on stomach and people with lactose intolerance also can enjoy it to the fullest. Although it tastes yummy on it's own, it can be used with many variations. Watch my video on this for a much clear insight into this superfood. Happy Feasting !!!!!!!!!

Ingredients Serving: 3

  1. All purpose flour 2 cups
  2. Active yeast 2 tsp
  3. Warm water 1 cup
  4. Melted butter 1 tbsp
  5. Salt 1 tsp
  6. Sugar 1 tsp
  7. FOR HOMEMADE LABNEH ;
  8. Yoghurt 400 gm
  9. Salt 1/2 tsp
  10. Dried parsley 1 tsp
  11. Zaatar 1 tsp
  12. Olive oil 2 to 3 tbsp

Instructions

  1. Allow the yeast to prove after stirring it in warm water along with the sugar.
  2. After 5 minutes of proofing, add this to the bowl with flour and salt.
  3. Knead a smooth dough by adding in melted butter too.
  4. Cover and allow to double in volume for an hour or so.
  5. Punch it down after an hour and divide into 5 to 6 parts.
  6. Roll each into a round pita and spread a generous layer of labneh on them
  7. Fold like a calzone or a pocket and seal the edges by pinching.
  8. Preheat the oven on 200°.
  9. After 10 minutes of preheating, bake these for 10-12 minutes.
  10. For the homemade labneh, there is already a video by me on how to do it.
  11. To a cheesecloth or a muslin cloth, add the fresh yoghurt and keep that in a strainer which in turn is kept in a bowl.
  12. Keep it in the refrigerator if the weather is hot or at room temperature if it is cold.
  13. Leave that for a day almost 24 hours.
  14. Remove and use it as desired.
  15. Mix it with herbs, olive oil and zaatar.
  16. Or use it as it is just with a little salt.
  17. It tastes yum both the ways.
  18. Serve this warm pitas with labneh for a healthy breakfast or brunch or even a full meal with olives, salad and juice.
