Ingredients to make Summer watermelon salad

  • 1 small watermelon
  • 2 firm red tomatoes
  • 100 gm feta cheese
  • 4 tablespoon extra Virgin olive oil
  • Balsamic vinegar
  • Some mixed herbs

How to make Summer watermelon salad

  1. Cut the flesh of the watermelon into cubes. Follow this procedure with the tomatoes as well.
  2. Take a bowl and mix the feta cheese with the herbs, add in 1 tablespoon olive oil and mix it thoroughly.
  3. Next add in the chopped watermelon and tomatoes into the bowl of the feta cheese mixture and combine it well.
  4. In a separate small bowl, mix the leftover oil and vinegar properly. Then add this mixture to the watermelon and tomatoes. Make sure to combine this dressing well into the salad.
  5. Serve chilled for best taste.
My Tip: Sometimes I add cucumber and mixed greens as well. However, the watermelon and tomatoes give a refreshing red colour with a spattering of white feta!
