Blueberry jam Star Cookies

It is very easy recipe and tastes awesome. It can be prepared of any desired shape. Fruit Jam has enhanced the taste of this cookie.

Ingredients Serving: 3

  1. Flour or Maida – 1cup
  2. Chilled Butter – 1/2 cup + 1 tbsp. (Room temp. for brushing)
  3. Sugar – 1 ½ tbsp.
  4. Lemon Juice – ¼ tsp
  5. Blueberry Jam – 1/4 cup
  6. Chilled water as required for kneading
  7. Milk – 1 -2 tbsp. for brushing

Instructions

  1. Mix the flour, chilled butter, sugar and lemon juice together in food processor until it forms a coarse mixture.
  2. Take out on work surface, add water slowly and gently knead it into a dough.
  3. Cover with cling wrap and refrigerate it for 30 minutes.
  4. Preheat oven at 160 or 175-degree C.
  5. Keep baking tray ready with parchment paper or butter paper.
  6. Pinch a ball from the dough. Roll it on lightly floured surface into 1/8-inch thick round disk.
  7. Cut using star shape cookie cutter. Repeat the process with remaining dough.
  8. Brush half the stars with butter and milk mixture. Add 1 tsp Blueberry jam. Spread evenly. Cover with another star. Seal all the edges with fork.
  9. Using 1-inch round cookie cutter cut out the center. Brush top with butter and milk mixture.
  10. Bake cookies in preheated oven for 18-20 minutes or until light brown. Remove it and let it cool on wire rack. Once cooled cookies will become crispy.
  11. Transfer it into airtight container. Consume within 2-3 days.
