A secret ingredient to make the tart more creamy. No one can tell its cauliflower.

Ingredients Serving: 6

  1. Digestive orange flavour biscuits 120 gm
  2. Unsalted butter 80 gm
  3. Cauliflower florets 1 cup
  4. White chocolate 100 gm
  5. Heavy whipping cream 3/4 cup
  6. Orange blossom water 1 tsp
  7. Orange rind 1/2 tsp
  8. Pinch of salt

Instructions

  1. Grind biscuits to a fine powder and add melted butter to it. Add pinch of salt. Mix till it resembles wet sand and you can make a ball out of it.
  2. Take an 8" removable tart tin and layer this mixture in it, pressing it well with hands or a bowl.
  3. Put this away in the fridge to chill till you prepare the mousse
  4. Boil cauliflower till it is very soft. Drain and make a smooth puree. Add some milk if required while grinding. (puree should be very smooth. Use a sieve if need be)
  5. Melt chocolate in a double boiler and keep aside to cool.
  6. Whip whipping cream till stiff peaks.
  7. Add a little bit of this cream to completely cooled chocolate and mix well.
  8. Add this whole mixture to the cream along with puree, essence and rind.
  9. Fold till mixed completely.
  10. Remove the tart tin, and fill in the mousse. Let it chill in the fridge for 4-6 hours or overnight. (cover with a cling wrap if need be to prevent odors from permeating the cream)
  11. Remove tart from tin by gently pushing the base up and serve cold with orange slices and berries.

Wow, Shivangi, cauliflower, I never thought of it. Loved it, have you used fresh Dairy cream?
