Baked Aubergine slices with cheese is a fusion recipe, just perfect for both snack and main course. A perfect way to serve Aubergine, freshly baked in airfryer, crisp rice flour and bread crumbs coating gives a crumble texture to the otherwise dull eggplant. A very healthy recipe.

Baked Aubergine Cheese Slices

Ingredients to make Baked Aubergine Cheese Slices

  • Long Aubergine/ Eggplant - 2
  • Rice flour - 2 tbsp
  • Bread crumbs - 2 tbsp
  • Milk - 1 cup
  • Chopped coriander - 1/2 cup
  • Cheese (quality of your choice) - 1/2 cup grated
  • Salt and black pepper powder - as per taste
  • Italian herbs/ Oregano - 1 tsp

How to make Baked Aubergine Cheese Slices

  1. Wash aubergine and cut long slices. Prepare a batter of rice flour and milk. Add salt and black pepper powder along with 1 tsp oil.
  2. In a plate, mix bread crumbs with coriander and oregano.
  3. Dip the aubergine pieces in the batter and then coat with the bread crumb mixture and place in an air fryer till they turn brown in colur and turn crisp.
  4. Take out the aubergine pieces and add cheese on top. Keep in air fryer again for 3 to 5 minutes, till the cheese slightly melts. Serve hot.
