Shahi pudding is made up of Petha, an Indian sweet/mithai. Petha pudding is an Indian dessert usually homemade, commonly served for dinners.

Ingredients Serving: 2

  1. Milk (Full cream/ Toned) – ½ liter
  2. Petha – 150 gms
  3. Cottage cheese – 150 gms
  4. Sugar – 50 gms
  5. Corn flour – 2 tsp
  6. Edible food colour, green – a pinch
  7. Dry fruits (Cashew nuts, almonds) – as many as desired
  8. Crushed cardamom – a pinch
  9. Saffron – a pinch

Instructions

  1. Dry roast all nuts till crisp. Crush them.
  2. In a heavy bottom pan, boil milk, cardamom powder, saffron and simmer to reduce to half the quantity. Add sugar once milk is reduced, cook for 2 minutes.
  3. Add in the peetha, corn starch and edible colour. Cook till peetha softens and and add cottage cheese just just before turning off the gas stove. This takes about 25 to 30 minutes on a simmering flame.
  4. Mix and pour in serving bowls and chill it for 30 minutes. Tastes best when eaten chilled.
