  • 2 Zucchini
  • 1 avocado
  • 1/2 cup coconut Milk
  • 2 lemon
  • salt to taste
  • pepper to taste
  • butter 2 tbsp
  • chilli Flakes 1/2 tbsp

How to make Zoodles in Creamy Coconut and Avocado Sauce

  1. Peel strips of zucchini, length wise. Cut approx 10 mm wide strips and toss in butter for 30 seconds.
  2. Take out the pulp of an avocado and coat with a little lemon juice, mash and push through a sieve, mix with coconut milk and season.

My Tip:

Add a little fresh Marjoram, if available.
