Christmas is just two days away and it's the time to cherish the company of family & friends in this joyous season of loving and sharing! Baked this gorgeous Rosemary Wreath Bread yesterday to suit the festive season and trust me, it is so ridiculously easy to make! This beautiful bread is just what you need as an edible center-piece to your lavish Christmas or New year dinner party. The secret ingredient in the list here is the Honey! Recently,I read on a cooking forum that using a little honey in bread-making helps retain the moisture of the baked product as well as gives a mild sweetness to it. Some claim that it even increases the shelf-life of the bread but it can not be said for sure. I tried this clever hack and did indeed feel the difference. Do try it friends. Ingredients Serving: 3

  1. For the dough-
  2. 2 cups plain flour
  3. ½ cup luke-warm water
  4. 1 tsp sugar
  5. 1 tsp dry yeast
  6. ½ tsp salt
  7. A sprig of fresh Rosemary, very finely chopped
  8. 1 tsp Honey (secret ingredient)
  9. 3 tbsp olive oil
  10. 1-2 tbsn water for kneading, if needed
  11. Also needed:
  12. Mozzarella cheese, cut into cubes
  13. 2 tsp Mixed Italian seasoning
  14. 1 egg
  15. Salt & pepper for seasoning

Instructions

  1. Make the dough first. We will start by activating the yeast. In a large bowl, take luke-warm water, dry yeast and sugar. Mix well and keep to rest for 10 mins. Water should be strictly lukewarm. Not hot or cold, as it will kill the yeast.
  2. When you see a foamy layer on top of your mixture, that indicates that your yeast has activated well.
  3. Next, add your flour, salt, honey, 1 tsp very finely chopped Rosemary, 1/2 tsp of Italian seasoning and oil. Combine it into a soft dough. Add 1-2 tbsn water more, if needed.
  4. Dust some flour on the kitchen platform and knead your dough very well for 8-9 minutes. Look up ‘stretch-and-pull’ method on the internet. This step is very essential as we need to activate the gluten in the dough. Knead to a smooth ball.
  5. Grease a deep bowl with oil and place your dough in it. The bowl should be large as the dough will rise and get doubled in size. Coat the dough surface all over with some more oil and cover the top of the bowl tightly in a cling-wrap.
  6. Rest the wrapped bowl of dough in a warm place for 2-3 hours.
  7. When you are ready to bake your bread, punch the air out of the risen dough and knead for a few minutes more.
  8. Roll out your bread dough in a thin sheet, on a lightly floured surface and cut it into 15-20 square pieces.
  9. Take a cube of mozzarella and place it on a piece of dough. Sprinkle some salt & pepper for seasoning.
  10. Gently close the dough over the cheese cube and rotate carefully between your palms for getting a smooth, round dough-ball. Prepare all your dough-balls this way.
  11. Cover your baking tray with a greased parchment paper and place your dough-balls side by side with around half inch of space between them in a shape of a wreath.
  12. It is essential to place your dough-balls at a little distance from each other before baking, because while getting baked, they will expand in size and merge beautifully together.
  13. If your dough-balls are of different sizes, place the smaller ones in the inner circle and larger ones in the outer circle.
  14. Cover with a cling film and keep aside for another 40 minutes for the final rise.
  15. Preheat your oven to 190 degrees C.
  16. Beat an egg into a bowl, and with a pastry brush, brush the dough-balls generously with your egg-wash. This will give your bread a beautiful glaze when baked!
  17. Sprinkle the Italian seasoning all over your wreath, while the egg-wash is still wet.
  18. Bake your wreath bread for around 25 minutes, till it gets wonderfully Golden Brown.
  19. Take it out of the oven and allow to sit for about 6-7 minutes. Eat hot and enjoy!
