Layered Potatoes with Bacon Jam

Ingredients to make Layered Potatoes with Bacon Jam

  • For Bacon Jam:
  • 5 Bacon slices
  • 2 Onions (Sliced)
  • 1 tbsp Garlic (Chopped)
  • 1 tbsp maple syrup
  • 5 tbsp Bourbon
  • 1 tbsp brown sugar
  • 1 tbsp Vinegar
  • Salt to taste
  • Pepper to taste
  • For Stacked Potatoes:
  • 3 Potatoes (Sliced Paper Thin)
  • 3/4 cup Parmesan Cheese
  • 1 tbsp chopped Rosemary (Fresh/ Dry)
  • Salt to taste
  • Pepper to taste
  • 1 Nasturtium Leaf

How to make Layered Potatoes with Bacon Jam

  1. For Bacon Jam: Bake the bacon till crispy
  2. Cook the onion in a pan with the extra bacon fat, add the garlic and cook till they caramelise
  3. Add the sugar and vinegar
  4. Add maple and syrup and the bourbon.
  5. Season with salt and pepper
  6. For the Potatoes: Slice paper thin slices of potatoes. Season with salt.
  7. Grate parmesan and mix with chopped rosemary and pepper.
  8. Butter a muffin tray and stack the potatoes and keep stuffing each layer with the cheese mix.
  9. Bake in an oven at 180 degree C - 200 degree C for 20-25 minutes or till crispy and golden brown.
