Ingredients Serving: 6

  1. ⅔ cup all-purpose flour
  2. ½ cup yellow cornmeal
  3. 4 tablespoons sugar
  4. 1 tablespoon Baking Powder
  5. ¼ teaspoon salt
  6. 4 tablespoons vegetable oil
  7. 1 egg
  8. ¼ cup milk
  9. ½ Cup Fresh Blueberries
  10. 2 tbsp granulated sugar

Instructions

  1. Preheat oven to 400 degrees F.
  2. Combine flour, cornmeal, sugar, baking powder, berries and salt in a medium size bowl .
  3. Add oil, egg, and milk and mix well so that lumps are gone.
  4. Pour into a greased muffin pan and bake for 15 to 20 minutes, or until you achieve golden brown color. Sprinkle granulated sugar on hot muffins.
