MASALA PASTA WITH BELL PEPPERS

ABOUT MASALA PASTA WITH BELL PEPPERS RECIPE

This is sort of a fusion dish. I have given the pasta an Indian touch like I always prepare the Maggi noodles trying out with different masalas and veggies to suit my taste buds.

Ingredients Serving: 2

  1. Pasta ---- 1 cup (use any variety)
  2. Red, yellow and green Capsicums/bell peppers --- 1 of each
  3. Onion ------ 1
  4. Tomato ---- 1
  5. Garlic ------ 1 tbsp
  6. Cumin powder -- 1/2 tsp
  7. Turmeric powder --- 1/4 tsp
  8. Red chilli powder --- 1/4 tsp
  9. Tomato ketchup --- 1 tbsp
  10. Pav bhaji masala --- 1/2 tsp ( add any masala available at home )
  11. Coriander leaves --- handful
  12. Salt ---------------- to taste
  13. Olive oil .... 2 tbsps

Instructions

  1. Boil the pasta adding a little salt and oil. Drain and run cold water. Add a little oil to avoid sticking. Set aside.
  2. Slice the onion, tomato and capsicums into long strips.
  3. Heat oil in a wok and saute the garlic. Add onions and fry for a couple of minutes.
  4. Tip in the capsicums, tomato and all the spice powders. Check the salt. saute and simmer for a minute until the capsicums are cooked. Keep them crunchy and do not over-cook.
  5. Stir in the ketchup, boiled pasta and mix. Garnish with chopped coriander leaves.
