ABOUT Kutchi Dabeli... RECIPE

Dabeli is basically a spicy, tangy and a sweet snack that is stuffed inside a pav- an Indian bun to be more specific. This is therefore exclusively an Indian snack that originated in Kutch. A very popular streetfood of Mumbai, it also is equally popular in Gujarat State. The secret ingredient in this one being the dabeli masala that is prepared at home afresh everytime by me. This tastes awesome when the masala is fresh. Enjoy this snack with your loved ones anytime you wish to have something super deliciously spicy and tangy. This will make for an ideal choice for sure.

Ingredients Serving: 5

  1. FOR THE DABELI MASALA ; We need
  2. Dry red chillies 2
  3. Cloves 4
  4. Cinnamon stick 1
  5. Coriander seeds 1 tsp
  6. FOR THE RED CHUTNEY ; We need
  7. Garlic cloves chopped 1/2 cup
  8. Dry red chillies 2 (soaked in hot water for 30 minutes)
  9. Lemon juice 1 tbsp
  10. Salt 1 tsp
  11. FOR THE POTATO FILLING ; We need
  12. Boiled and mashed potatoes 3
  13. Onion chopped 1
  14. Grated coconut 1/4th cup
  15. Salt 1/2 tsp
  16. Coriander leaves chopped 1/4th cup
  17. Asafoetida 1/8th tsp
  18. Cumin seeds 1 tsp
  19. Oil 2 tbsp
  20. Dates chutney 2 tsp
  21. Dabeli masala 1 sp
  22. FOR SERVING DABELI ; We need
  23. Pav buns 7 to 8
  24. Dabeli masala 2 tbsp
  25. Pomegranate seeds 1 cup
  26. Nylon sev 1 cup
  27. Dates chutney 5 tbsp
  28. Red chutney 3 tbsp
  29. Roasted peanuts 1/2 cup

Instructions

  1. Dry roast all the ingredients mentioned under dabeli masala.
  2. Grind them to a fine powder and set aside.
  3. For the garlic red chilli chutney, add the soaked chillies and the other ingredients to a blender.
  4. Make a smooth paste using some water if required.
  5. For the potato filling, heat oil in a pan.
  6. Crackle cumin seeds first.
  7. Now add asafoetida.
  8. Now saute the chopped onion.
  9. And add the mashed potatoes.
  10. Add dates chutney and the dabeli masala to it.
  11. Mix well and garnish with chopped coriander and grated coconut.
  12. Slightly toast the pav buns with some butter.
  13. Apply red chutney on one side of the pav.
  14. And dates chutney on the other side.
  15. Place the potato filling now.
  16. Top up with some pomegranate seeds.
  17. Followed by the nylon sev and roasted peanuts.
  18. Garnish with some more chopped coriander and onion too.
  19. Make all in the same way and serve immediately.
