Chicken with roasted bell pepper & tomato sauce

Ingredients to make Chicken with roasted bell pepper & tomato sauce

  • Butter - 20 gms
  • Garlic - 5 gms
  • Chopped onion - 20 gms
  • Tomatos - 50 gms
  • Red pepper - 50 gms
  • Yellow pepper - 50 gms
  • Basil - 10 gms
  • Oregano - 10 gms
  • Chilli flakes - 10 gms
  • Thyme - 10 gms
  • Sugar - 10 gms
  • Cottage cheese - 20 gms
  • Chicken 200 gms
  • Refined flour 50 gms
  • Water 15 - 20 ml
  • Butter 5 gms
  • Salt 20 gms
  • Cucumber 1/2
  • Carrot 1/2

How to make Chicken with roasted bell pepper & tomato sauce

  1. Blanch tomatoes, roast bell peppers and remove their outer layer.
  2. Heat up butter in a pan and saute the garlic in it. Add onions and saute.
  3. Peel the tomatoes and add them in a pan. Put bell peppers along with water into the pan and cook for 5 minutes.
  4. Strain, keep the liquid and grind this mixture in a grinder till smooth paste texture is obtained.
  5. Season with oregano, basil, thyme, chilli flakes and salt.
  6. Adjust the consistency (by adding the saved water) and seasoning, then add some sugar. The sauce is ready.
  7. Marinate chicken with thyme, basil, oregano, salt, sauce for 1 hour.
  8. Wrap chicken in cling wrap and cook it in boiling water for 10-15 minutes.
  9. Add salt to flour followed by butter and water.
  10. Knead it to make a dough and cut in pieces of 15 gms each.
  11. Roll these pieces with a rolling pin into thin sheets.
  12. Cook it on a heated non stick pan.
  13. Grate cottage cheese and season it. Put cheese on top.
  14. Put chicken in a plate pour sauce over it. Give bread as accompaniment.
  15. Garnish it with cucumber, parsley, chilli flakes and carrot.

My Tip:

Roaste bell peppers give a base to taste while tomatoes and sugar add some tangy flavour.
