ABOUT Traditional Christmas Cake RECIPE

Since there is no Christmas without a rich fruit cake, I have made this cake this Christmas and it is a huge hit since my secret ingredient is a very healthy one and easily available as well.

Ingredients Serving: 10

  1. Pre-soaked nuts (almonds, walnuts, cashew, sultanas, raisins) and peels (mix fruit peels, candied lemon peel, candied orange peel) in dark rum ( I have added chopped dates (khajoor) for extra nutritional value)
  2. Zest of one orange
  3. zest on one lemon
  4. juice of one orange
  5. 3/4 teaspoon cinnamon powder
  6. 5 crushed cloves
  7. 1/3 teaspoon nutmeg powder
  8. one nilgiri tea premix (Secret Ingredient)
  9. three eggs
  10. 150 gms unsalted butter
  11. 250 grams refined flour
  12. 200 grams jaggery (in powder form) (Secret Ingredient)
  13. 3/4 teaspoon baking powder
  14. 1/4 teaspoon Baking Soda
  15. 1/4 cup dark rum ( for feeding the cake)

Instructions

  1. Cream butter and jaggery powder together well.
  2. Add eggs one by one and mix well and then add orange juice to it.
  3. sift flour, baking soda, baking powder, nilgiri tea premix and spices together
  4. combine dry mixture to jaggery mixture and mix slowly and light-handedly
  5. add nuts and zest to the mixture and pour in greased tin
  6. bake for about 35-40 minutes at 170 C in a pre-heated oven
  7. Insert a tooth pick and if it comes out clean, it means it is baked properly.
  8. Let it cool well before taking it out from the tin. Pay extra attention since this cake is crumbly.
  9. This cake can last for a month in an air-tight container.
