ABOUT Kaapa RECIPE

Kaapa is a traditional Kumaoni curry prepared with fresh spinach in a cast iron wok. It is mashed up for a long time in the wok itself. This gives it a unique taste and texture and the process also makes it rich in iron. It is tempered with Jamboo – a herb found in the higher Himalayas, that adds great flavour and makes it a great warming recipe for winters.

Ingredients Serving: 2

  1. 1 bunch Fresh Spinach
  2. 2 teaspoons whole wheat flour (atta)
  3. 1/2 teaspoon cumin (Jeera)
  4. 1/2 teaspoon turmeric powder
  5. 1 teaspoon jamboo
  6. 3 tablespoons oil
  7. 1/2 cup water
  8. Salt to taste

Instructions

  1. Wash and chop the spinach finely.
  2. Heat 2 tablespoons oil in a wok. Add cumin. When it splutters, add turmeric and then add spinach.
  3. Add water. Cover and cook till spinach is done. Mash spinach with a ladle. Continue to do so till it gets a semi pureed texture.
  4. Add whole wheat flour and stir well so that there are no lumps. Add salt. Cook till kaapa bubbles and thickens.
  5. Heat remaining oil, add jamboo and add it to kaapa. Stir and serve hot with chapattis.
