Raisin and Apple Strudel Pancakes

Ingredients to make Raisin and Apple Strudel Pancakes

  • 1/2 cup all purpose flour (maida)
  • 1 egg white
  • Milk 3/4 cup
  • Butter unsalted 1 tbsp
  • 1/4 cup brown sugar
  • 1/4 cup raisins
  • Apples 2 small peeled and sliced
  • Lemon zest of 1 lemon
  • Cherries 1/4 cup
  • A small pinch of nutmeg/cinnamon
  • Veg oil as required

How to make Raisin and Apple Strudel Pancakes

  1. Mix the milk, egg white and maida and keep it aside for 10 mins.
  2. Melt the butter, then add in the sugar. When the sugar dissolves, add the apples and lemon zest, cook it for 5 mins. Then add raisins,nutmeg,cherries,and stir for 3-4 mins.
  3. Brush the pan with veg oil, then pour away excess oil. Now pour some batter on the hot pan to make a thin pancake. Cook for 2 mins on one side, then flip and cook the other side for 1 min. Keep aside.
  4. Make all the pancakes in the similar way.
  5. Now place a pancake in a plate. Spoon filling in the center. Fold two sides in the center and bring other two over to form square shaped parcel.
  6. Cut in half and serve it with whipped cream/custard/ice cream to enjoy!
