ABOUT Sweet and sour pumpkin with poori RECIPE

This is a traditional U.P style breakfast ,full of flavours.

Ingredients Serving: 6

  1. Pumpkin - 500 gm (peeled, washed & chopped into pieces)
  2. Ginger- 1'' inch piece (peeled, washed & cut into Juliennes)
  3. Tomatoes - 2 (washed & finely chopped)
  4. Green chillies - 1 ( washed & finely chopped
  5. Whole red chillies - 2
  6. Turmeric powder - 1 tsp
  7. Coriander powder - 2 tsp
  8. Dry mango powder ( Amchur powder) - 1 tsp
  9. Cumin seeds - 1 tsp
  10. Asafoetida - a pinch
  11. Whole coriander seeds - 1 tsp
  12. Fennel seeds - 1/2 tsp
  13. Degi mirch powder - 1/2 tsp ( normal red chilli powder can also be used instead of degi mirch powder
  14. Sugar - 1 tsp
  15. Salt to taste
  16. Mustard oil - 2 tbsp
  17. Garam masala - 1/2 tsp
  18. Fresh green coriander leaves - 1 tbsp ( washed & finely chopped)

Instructions

  1. Heat mustard oil in a pan.
  2. Add cumin seeds , whole coriander seeds and fennel seeds. Let them crackle.
  3. Then add broken whole red chillies ,asafoetida and turmeric powder.
  4. Mix it and then immediately add pumpkin pieces.
  5. Add ginger juliennes and green chillies.
  6. Add salt and cover the pan with a lid.
  7. Let it cook for few minutes until the pumpkin pieces gets little tender.
  8. Then add coriander powder, dry mango powder, degi mirch powder, sugar.
  9. Cook till tomatoes and pumpkin pieces both gets tender.
  10. Add sugar and cook for a while.
  11. Turn off the gas.
  12. Sprinkle garam masala over it and garnish with fresh green coriander leaves.
  13. Sweet & sour pumpkin is ready to be served with hot crisp poories and green coriander chutney.
