  1. Left over roti 4
  2. Eggs 5
  3. Onion 3 sliced
  4. Tomatoes 2 chopped

Instructions

  1. ROTI 4,EGGS 5,ONIONS 3,TOMATOES 2,CHILLI 1, CORIANDER 1/2 C,FEW CURRY LEAVES,CHILLI PWDR 1/2 TSP,
  2. SAUF 1 TBSP,CINNAMON STICK 2 PC,GARAM MASALA 1/4 TSP,COCONUT MILK PWDR 4TBSP, SALT TO TASTE & OIL
  3. CUT THE ROTIS WITH SCISSORS AND MAKE SMALL SQUARES
  4. TAKE A KADAI AND ADD OIL
  5. ADD SAUF/ FENNEL SEEDS 1 TBSP
  6. THEN ADD 2 PCS CINNAMON STICK
  7. ADD FEW CURRY LEAVES
  8. ADD CUT GREEN CHILLI
  9. ADD 3 SLICED ONIONS
  10. WHEN THE ONIONS ARE HALF COOKED
  11. ADD 2 CHOPPED TOMATOES.DO NOT OVER COOK THE TOMATOES.
  12. ADD CHOPPED CORIANDER 1/4 CUP
  13. MIX WELL
  14. ADD RED CHILLIES PWDR 1 TSP.YOU CAN ADD MORE OR LESS ACC TO YOUR PREFERENCE
  15. ADD 1 TSP ZEERA PWDR
  16. ADD 1 TSP SALT
  17. ADD 1/4 TSP GARAM MASALA PWDR
  18. MIX EVERYTHING WELL
  19. TAKE THE COCONUT MILK PWDR AND ADD WATER TO IT.MIX WELL.YOU CAN USE FRESH COCONUT MILK ALSO
  20. ADD THE COCONUT MILK TO THE ONION MIXTURE
  21. MIX WELL
  22. NOW ADD THE CUT ROTIS AND LET IT COOK TILL THE MILK IS ABSORBED
  23. TAKE 5 EGGS.ADD SALT ACC TO YOUR TASTE AND WHISK IT
  24. WHISK WELL
  25. ADD FRESH BLACK PEPPER PWDR
  26. TAKE A PAN AND ADD THE EGG AND START SCRAMBLING IT
  27. KEEP MIXING AND COOKING THE EGGS
  28. ADD CHOPPED CORIANDER AND MIX
  29. TAKE A PLATE AND ADD THE ROTI MIXTURE
  30. ADD THE SCRAMBLED EGGS ON TOP
  31. GARNISH WITH FRESH CORIANDER LEAVES
