Ingredients Serving: 2

  1. Shell Pasta – 1 cup
  2. Carrot – 2 tbsp
  3. Capsicum – 2 tbsp
  4. Cauliflower – 6 florets
  5. Pepper – 1/2 tsp
  6. Onion – 2 tbsp
  7. White sauce - 4 tbsp
  8. Salt to taste

Instructions

  1. Cook pasta util al-dente. Add cauliflower florets to hot water and blanch for 5 minutes.
  2. Cut juliennes of carrots, onion and bell pepper.
  3. Add ¼ tsp. of butter to a pan and when it melts saute carrot and bell pepper juliennes along with blanched cauliflower florets. Set aside to cool.
  4. Combine cooked pasta, chopped onion and sauted vegetables in a bowl.
  5. Toss by adding cold white sauce. Season with salt and pepper.
  6. Toss and leave it in fridge for at least 4 hours or overnight. Serve cold.
