ABOUT Kanchipuram Idli RECIPE

An age old breakfast recipe which had its origin in the temple city Kanchipuram where its offered to God. A perfect balanced breakfast ideal for all age groups since its steamed has digestive easily

Ingredients Serving: 4

  1. Par boiled rice / Idli Rice / Puzhungal Arisi 3 cups
  2. Urad dhal / Black gram 1 cup heaped
  3. Fenugreek seed 1 full teaspoon
  4. Dry ginger powder 1 tea spoon
  5. Coarsely crushed pepper and cumin seeds 2 teaspoons together
  6. Salt to taste
  7. Ghee or Oil 3 tea spoons

Instructions

  1. Wash the rice and dal together , add fenugreek and soak for 4 hours
  2. Grind to smooth batter adding required salt to the consistency of idli batter
  3. Allow to ferment overnight
  4. Before making heat ghee in a sauteing pan, do the seasoning with the dry ginger powder, pepper,cuminpowder and add tot he batter.
  5. Mix well.
  6. Grease a plate as we do for dhokla and pour the batter in to it for half level.
  7. Steam it out for 20 minutes and switch off.
  8. Take it out and cut in to desired shape and serve with chutney or sambar or Milagai Podi
