ABOUT Oushadha Kanji / Herbal Porridge RECIPE

Since I am native of Kanyakumari which was a part of Kerala once, My Grandma makes all Kerala recipes at home. During Monsoon seasons and winter days once in ten days she used to make this Porridge as breakfast that boosts our immune and prevents from getting affected by cold and flu she says. The hot porridge garnished with fried onions in ghee is had with thick coconut chutney as side dish. Even now we make this at home. It is very healthy since made with red rice.

Ingredients Serving: 5

  1. Kerala Red rice 1
  2. Coconut milk 2 cups
  3. Omam / Ajwain 1 tea spoon
  4. Pepper 2 tea spoon
  5. Cumin seeds 1 tea spoon
  6. Dry ginger (chukku) an inch piece
  7. Kurunthotti root / Coomon wireweed – 2 tsp
  8. Fennel seeds 1/2 tea spoon
  9. Coriander seeds 2 tea spoons
  10. Fenugreek seeds 1/4 tea spoon
  11. Nut meg a pinch
  12. Cloves 2 and Cinnamon stick 1 inch
  13. Small Onions / Shallots / Ulli 10 thinly sliced
  14. Jagerry powder 6 table spoons

Instructions

  1. Wash the rice and soak it with 6 cups of water.
  2. Mean while in a pan dry roast all the herbal spices together till nice aroma comes, powder finely.
  3. Add the powder to the soaked rice and pressure cook for 20 mins up to 7 or 8 whistles.
  4. Once the steam is released, boil it adding jagerry powder till it becomes thick.Switch off.
  5. In ghee roast the chopped onions to golden brown.
  6. Add the roasted onions and coconut milk to the porridge, mix well and serve hot.
