Ingredients Serving: 4

  1. Thick poha (flattened rice) 2 cup
  2. Potato 1 medium
  3. Finely chopped onion 1 small
  4. Curry leaves 6 to 7
  5. Finely chopped green chillies 1 small
  6. Mustard seeds 1/4 tablespoon
  7. Cumin seeds 1/4 tablespoon
  8. Peanuts 2 tablespoons
  9. Turmeric powder 1/2 tablespoon
  10. Salt as required
  11. sugar 1 tablespoon
  12. Lemon juice 1 1/2 tablespoons
  13. Chopped coriander leaves 2 tablespoons
  14. Oil 2 tablespoons
  15. Finely chopped tomatoes 1 small
  16. Sev 1/2 cup

Instructions

  1. Heat up a pan and add 2 tbsp peanuts.
  2. Roast the peanuts till they become crunchy and keep aside.
  3. keep the poha in the strainer and rinse it in running water. make sure that you do not rinse it too much or else it breaks and gets mushy. 
  4. Sprinkle ½ tsp turmeric powder, 1 tsp sugar and salt (as required) in the poha. Gently mix with your hands.
  5. Heat 2 tbsp oil in a pan or kadai.
  6. Now add small chopped potato.
  7. Saute the potatoes till light golden and crisp.
  8. Remove them with a slotted spoon and keep aside.
  9. In the same pan or kadai, add 1 tsp mustard seeds to the hot oil. When they splutter, add the 1 tsp cumin seeds.
  10. Allow the cumin seeds to change the color and crackle.
  11. Then add about ½ cup finely chopped onions. Saute the onions till they become translucent and soften.
  12. Now add the 6 to 7 curry leaves, 1 tsp chopped green chilies. saute for half a minute.
  13. Add the poha. Stir gently but very well till everything is mixed evenly.
  14. Then add the sauteed potatoes, roasted peanuts and lemon juice. Again mix gently with the rest of the mixture. Check the taste and add more of the salt or sugar if required.
  15. Cover the pan tightly with a lid and steam poha for a minute or two on a low flame. 
  16. Poha is ready to be served.
  17. Garnish Poha with finely chopped tomatoes, coriander leaves and Sev.
