Ingredients Serving: 4

  1. Gram flour { Besan} 1 cup
  2. Curd 1/4 cup
  3. Turmeric powder 1/4 tsp
  4. Juice of 1 lemon
  5. 2 Chopped Green chillies
  6. Grated ginger or ginger paste 1 tsp
  7. Salt 1 tsp or as per your taste
  8. 1 packet Eno { fruit salt}
  9. oil 2 tbsp
  10. For tempering
  11. Oil - 3 tbsp
  12. Mustard seeds 2 tsp
  13. Curry leaves 10- 15
  14. 3 green chillies
  15. Water as required
  16. Sugar 1 tbsp or as per your taste

Instructions

  1. Take a bowl, put sieve on it and add gram flour in the sieve and filter it properly.
  2. Now add turmeric powder , salt, lemon juice, curd,chopped green chillies, ginger paste and mix it well
  3. Now gradually add water in it and prepare a smooth and pouring consistency batter. Batter should neither be very thin nor thick.If batter is thick then you will not get pores in dhokla just like market. If batter is very thin then dhokla will not cook well and become spongy
  4. Now after preparing the batter add oil in it and mix it well
  5. Now add water in a steamer cover it and let the water boil
  6. When water starts boiling then immediately Greese dhokla plate with oil properly
  7. Add eno( fruit salt) in dhokla batter, pour 1 tsp water over eno and mix it well . Don't mix it much
  8. After mixing it . Pour batter immediately in the dhokla plate and transfer it into the steamer and cover the steamer. Do this process very quickly.
  9. Now cook dhokla on high flame for 8 minutes .
  10. After 8 minutes check the dhokla by inserting toothpick in it . If it comes out clean then it means dhokla is ready
  11. Now take out the dhokla and let it cool
  12. Meanwhile , let's prepare tempering of dhokla. Add oil in tadka pan , let it heat when oil is medium hot then add mustard seeds in it and let it crackle. After seeds crackled then add curry leaves, slit green chillies and fry it. Now add water and sugar in it and mix it. Turn off the gas
  13. Demould the dhokla and pour tempering over it , cut it into square pieces and garnish it with green coriander and grated coconut over it and serve it :blush:
